Colorado Bison Burgers

Bison is commonly known as American Buffalo, however that is not the correct scientific term. Bison are native species to North America and serve as a healthy alternative to cow meat. Bison meat has about 5 grams of fat in a 7 oz serving, compared to beef which has up to 40 grams of fat. Bison even has a lower fat and calorie count than skinless chicken. This tasty meat pairs well with the tangy goat cheese blend, applewood smoked bacon, and bacon onion jam to create a delicious healthy burger (well, kind of healthy).

BISON BURGERS: Serves 10

  • 10 bison patties

  • 10 slices of goat cheese

  • 10 brioche buns

  • 10 tbsp of Worcestershire sauce

  • 1 pound of thick cut applewood smoked bacon

  • 1 red onion (sliced)

  • 3 shallots (diced)

  • 1/2 cup of brown sugar

  • 1/4 cup of maple syrup

  • 1/3 cup of apple cider vinegar

  • Butter, salt, pepper, and garlic seasoning

    Cook half of the bacon in a pan over medium heat until crispy. Then sauté the onion and shallots in the bacon fat over medium heat for about 15 minutes. Stir in the sugar, vinegar and syrup, and cook over low medium heat until it turns into a jam like texture.

    Marinate the bison burger patties in the Worcestershire sauce and season with salt, pepper and garlic. After about 30 minutes, throw the rest of the bacon and the bison meat on the grill and cook to your liking then top with the cheese.

    Butter the brioche buns interior and heat over low heat until golden and crispy on the inside. Assemble your burgers and enjoy!
